Insider tip: Montilla-Moriles, in the hot hills south of Córdoba, makes sherry-style wines — fino, amontillado, oloroso and intensely sweet Pedro Ximénez — but built almost entirely from the PX grape, which ripens so richly here that many wines are unfortified. Summers are fierce (36°C), driving an early August-September harvest where grapes are often sun-dried on mats (the soleo) for the sweetest styles. The albariza-type soils echo Jerez. Visit in spring or autumn and combine with Córdoba’s Mezquita.
