Paul Boutinot’s biodynamic property uses horses instead of tractors in all vineyards — reducing soil compaction and preserving the microbial life that defines their wines. The gravity-fed cellar and clifftop restaurant (one of South Africa’s best views) make Waterkloof an essential visit even for non-wine travellers.
