Insider tip: Muscadet, at the Atlantic end of the Loire around Nantes, is France’s great oyster wine — bone-dry, saline and bracing, made entirely from the Melon de Bourgogne grape. The best are aged "sur lie" (on the spent yeast) for extra texture, and the cru communaux (such as Clisson and Gorges) show it can age beautifully. It is one of the best-value serious whites in France. Cool, damp and maritime, the area is at its prettiest in late spring through the September harvest. Seafood is the obvious pairing.
